Easy Breezy Chicken Soup
I love a good chicken soup and I will usually cook it from scratch using a whole chicken. Sometimes though, you just need something quick and don't have all day to let it cook in the crockpot. I get that! So voila, an easy chicken soup you can be eating same day.

 

Ingredients:


6 cups of Chicken Broth
1 Carrot cut into rounds
1 pound of Chicken (skinless)
1-2 Celery Stalks
1 Garlic Clove
1/4 Onion diced
Heavy Pinch of Himalayan Sea Salt (US buy here)
Black Pepper (US buy here)
Sprinkle of Dried Parsley (US buy here)
1 tsp. Extra Virgin Olive Oil (US buy here)




Directions:


* Heat up the olive oil in a frying pan and sauté cut up veggies (garlic, onion, carrot, celery). 
* Add in diced chicken to cook through. 
* In a large pot heat up the chicken broth and add the sautéed veggies & cooked chicken. 
* Sprinkle heavily with salt & pepper and add pinches of onion powder and dried parsley.
* Let simmer for 20 minutes (taste and adjust as needed)
* Enjoy!

Cobb Salad

Cobb Salad
Okay I'll admit, I've been on a bit of a salad kick lately but man it's HOT outside ya know? Hot weather calls for salads and I really do love a good salad. 



Ingredients:


2-3 Slices of cooked Bacon 
1/2 large Tomato 
1/2 Avocado
2 Hard Boiled Eggs
1/2 - 3/4 head of Romaine Lettuce
1 cup of chopped cooked Chicken
1/3 cup of Feta Cheese
1 Green Onion
Black Pepper (US buy here)



Directions:


* Chop everything up and place in a bowl. 
* Drizzle with Balsamic Vinegar and olive oil
* Sprinkle with salt & pepper. 
* Enjoy!

Bacon Salad

Bacon Salad
You really can't go wrong with bacon, am I right or am I right? I love this salad on a hot day when I don't feel much like cooking. Thought I'd share it with you!


Ingredients:

Taco Salad

Taco Salad
I looooove taco salad! This is just my yummy version that I make often especially in the summer time. Summer time is a great time for salads isn't it? I hope you enjoy!


Ingredients:


1/2 head of Romaine Lettuce
Handful of Cherry tomatoes 
1/3 large Cucumber
1-2 large Dill Pickles
1/2 Avocado
1/4 pound of lean Ground Beef
Low Fat Sour Cream
Sugar Free Salsa
Himalayan Sea Salt
Green Onions
1oz. Grated Cheese (optional)
1TB Chili Powder
1/4 tsp. Garlic Powder
1/4 tsp. Onion Powder
1/4 tsp. Red Pepper Flakes
1/2 tsp. Paprika
1 & 1/2 tsp. Ground Cumin




Directions:


* Mix up all the spices and set aside (this is your taco seasoning)
* Fry up the ground beef and drain the fat, then sprinkle with taco seasoning
* Chop up the lettuce and veggies and toss them together in a large bowl. 
* Top with beef, salt, sour cream and salsa and optional grated cheese. 
* Enjoy!

Slimming Tuna Salad

Slimming Tuna Salad
This tuna salad is super yum and the fat content is under 5g so it fits well into a THM FP meal. If you don't know what Trim Healthy Mama is I highly suggest looking it up! It's the plan I used with crazy success in 2014 and lost 60lbs that year. Life blew up in my face in 2015 so I gained it all back because I wasn't following the plan anymore. I'm back on track and loving how I feel now! 


Ingredients:


1/2 can of Tuna
1 & 1/2 tsp. Hellman's 1/2 fat Mayo
2 tsp. 0% Greek Yogurt
1 Dill Pickled chopped
Pickle Juice (desired amount)
Himalayan Sea Salt (to taste)
Black Pepper (to taste)
Romaine Lettuce Leaves



Directions:


* Add all ingredients to a bowl except for the pickle juice & lettuce.
* Mix together and add desired amount of pickle juice for texture.
* Dollop into lettuce leaves.
* Enjoy!
