Sprouted French Toast

Sprouted French Toast
Did you know that sprouted flour is so much gentler on your blood sugar than regular flour? It's true! So now you can still have your French toast, and eat it too.



Ingredients:


Splash of Liquid Egg Whites  
1 Egg
Liquid Stevia (US buy here
2 slices of Sprouted Ezekiel Bread
Cinnamon (US buy here)




Directions:


* In a bowl crack the egg and add a splash of liquid egg whites. 
* Sprinkle in some cinnamon and a couple of drops of liquid stevia. 
* Heat up the frying pan and spray with coconut oil cooking spray. 
*Dip the bread into the egg mixture and cook until golden brown, then flip and cook the other side.
* Serve with sugar free syrup and optional fruit.
* Enjoy!

Cashew Stir Fry

Cashew Stir Fry
Stir fry's are such an easy thing to make but is so often forgotten! It's simple to make a delicious meal in 30 minutes if you've got the right recipe.


Ingredients:


1 TB Erythritol (US buy here)
1/8 tsp. Molasses (US buy here)
3/4 cup of Chicken Broth (US buy here)
1 pound of Chicken (skinless)
1 Zucchini
1 cup of Broccoli Florets
1 Red Bell Pepper
1 cup of Sliced Mushrooms
1 cup of Snow Peas
1-2 Celery Stalks
1 cup of Whole Cashews (US buy here)
3 Garlic Cloves
1/4 cup of Bragg Liquid Aminos (US buy here)
1 TB Sesame Oil (US buy here)
1/2 tsp. Xanthan Gum (US buy here)
Heavy Pinch of Himalayan Sea Salt (US buy here)
Black Pepper (US buy here)
1 TB Extra Virgin Olive Oil (US buy here)




Directions:


* Heat up the olive oil in a wok and sauté the chicken until nearly cooked through. 
* Add in all the chopped veggies & cook until veggies are tender and chicken is cooked. 
* Toss in the cashews then add the chicken broth, liquid aminos, diced garlic, erythritol, molasses, and sesame oil. 
* In a small bowl mix together the xanthan gum with 2-3 TB of water. Stir into the wok and cook until thickened. 
* Enjoy!

Easy Breezy Chicken Soup
I love a good chicken soup and I will usually cook it from scratch using a whole chicken. Sometimes though, you just need something quick and don't have all day to let it cook in the crockpot. I get that! So voila, an easy chicken soup you can be eating same day.

 

Ingredients:


6 cups of Chicken Broth
1 Carrot cut into rounds
1 pound of Chicken (skinless)
1-2 Celery Stalks
1 Garlic Clove
1/4 Onion diced
Heavy Pinch of Himalayan Sea Salt (US buy here)
Black Pepper (US buy here)
Sprinkle of Dried Parsley (US buy here)
1 tsp. Extra Virgin Olive Oil (US buy here)




Directions:


* Heat up the olive oil in a frying pan and sauté cut up veggies (garlic, onion, carrot, celery). 
* Add in diced chicken to cook through. 
* In a large pot heat up the chicken broth and add the sautéed veggies & cooked chicken. 
* Sprinkle heavily with salt & pepper and add pinches of onion powder and dried parsley.
* Let simmer for 20 minutes (taste and adjust as needed)
* Enjoy!

One Pan Chicken & Bacon Broccoli

One Pan Chicken & Bacon Broccoli
You know that feeling when you eat something so delicious you immediately know it's going to be a household staple? This is one of those recipes for me. From my table to yours, I hope you enjoy it as much as I do!



Ingredients:


6 Slices of Bacon 
4TB Extra. Virgin Olive Oil 
2 Cloves of Garlic (diced)
1/2 tsp. Paprika (US buy here)
1/2 tsp. Ground Coriander (US buy here)
1/8 tsp. Cayenne Pepper (US buy here)
6 Chicken Thighs (bone in/skin on)
2 cups of Broccoli Florets
Black Pepper (US buy here)



Directions:


* Preheat the oven to 400F.
* Wash & cut the broccoli & place in a large bowl.
* Cut the raw bacon into small pieces and add to the bowl.
* Drizzle heavily with olive oil and salt & pepper and stir together well.
* Lay the veggies flat on a baking sheet then place the chicken on top. 
* In a small bowl add 2TB of olive oil, diced garlic, spices, salt & pepper and stir well. 
* Using a brush spread the sauce on top of each chicken thigh making sure to use it all up. 
* Bake in the oven for 30-40 minutes (use a meat thermometer to ensure chicken is over 165F)
* When it's cooked you can turn on the broiler for a couple of minutes to crisp everything up.
* Enjoy!
